Onion Rings with harissa-majo
AVIKO Onion Rings
10-12 pieces of fresh or dried chili peppers
optionally 1 raw or roasted fresh red pepper
3 cloves of garlic
1 teaspoon of salt
2 teaspoons of ground cumin
2 teaspoons of ground coriander
4 tablespoons of olive oil
4 tablespoons of mayonnaise
1 bunch of chives and coriander
1. Preheat the oven to 220 degrees. Place Onion Rings on baking paper and bake for about 20 minutes.
2. In the meantime, prepare the harissa. Soak chili peppers (fresh or dried) in hot water for 30 minutes. After this time, we clean them of stalks and seeds. Peel the garlic and mix everything in a blender with spices and salt. Put it in a jar and pour olive oil over it.
3. Mix harissa with mayonnaise to create a creamy sauce. Depending on the level of spiciness we like, we can add 1-2 tablespoons of harissa. Serve the onion rings immediately after baking with the sauce, sprinkle with finely chopped chives and coriander.
