Cod baked with herbs, butter and lemon zest served with Pati Parts
AVIKO Pati Parts 600g
600g cod fillet
zest of ½ lemon
3 sprigs of thyme (or dry spice)
3 sprigs of mint (or dry spice)
extra virgin olive oil
salt and pepper
2 whole heads of garlic
2-3 lemons
1. Prepare Pati Parts according to the instructions on the packaging.
2. Cut the garlic and lemon heads in half and fry them in a pan in a little olive oil.
3. Fillet the cod and - if necessary - remove the bones using kitchen tweezers.
4. Place the fillets on an oiled baking tray lined with baking paper. Season them with pepper, salt, thinly chopped herbs and grated lemon peel. Place a little butter on each fillet.
5. Bake the cod in an oven preheated to 180°C for 10 minutes. Before serving, season with fresh thyme.
Place a portion of Pati Parts, cod fillet with dressing/garnishing, and roasted garlic and lemon on a deep plate. Season to taste with salt and pepper. You can also drizzle some olive oil over the fish.
