AVIKO Pom' croquettes served with leek salad, carrots, parsley, roasted almonds, yoghurt and fresh mint

Ingredients

AVIKO Pom' Croquettes
2 leeks (white part only, weight about 250 g)
2 carrots (weight about 250 g)
1 stalk of celery
2 tablespoons of roasted almonds
a bunch of parsley
1 package (125 g) of Greek yogurt
lemon juice
3 sprigs of fresh mint
extra virgin olive oil
salt and pepper

Preapare AVIKO Pom' Croquettes according to the instructions on the packaging.

Mix the thinly sliced leek and carrot (can be grated) in a large bowl. Add thinly sliced celery stalk and parsley leaves.

Roast almonds in a pan and cut them lengthwise if using whole almonds.

Dressing: mix thoroughly yogurt, salt, pepper, chopped mint leaves, lemon juice and a little of olive oil. 

Arrange a bit of salad on the plates and a few potato croquettes on top. Season to taste with salt and pepper. Decorate with roasted almonds before serving.
