Tomatoes stuffed with smoked mackerel, pearl barley, capers, olives with AVIKO Super Crunch Original fries and tzatziki sauce
Aviko Super Crunch Original fries
4 large tomatoes
120g pearl barley, cooked al dente
90g grilled mackerel in oil, drained
10 black pitted olives
10 capers
olive oil
salt pepper
a few basil leaves
For the tzatziki sauce you will need:
500g of Greek yogurt
2 cloves of garlic
1 green cucumber
olive oil
dill
salt pepper
2 tablespoons of lemon juice
1. Wash the tomatoes, remove the top part and use a spoon to hollow out.
2. Keep the cores and tops.
3. In a large bowl, chop the drained mackerel, half of the reserved tomato pulp, sliced olives and capers.
4. Add pearl barley and chopped basil. Stuff the tomatoes with the stuffing prepared in this way, cover them with the upper part and cool in the fridge.
Tzatziki sauce:
1. Grate the cucumber on a coarse grater, place it on a sieve with a bowl and put it in the fridge for at least an hour.
2. After taking it out, press it well in your hands.
3. Finely chop the garlic, mix with yogurt and cucumber, season with salt, pepper, olive oil and lemon juice, add dill at the end and cool.
Serve tomatoes with fries and tzatziki sauce.
