Pork tenderloin medallions with cheese sauce served with AVIKO Pati Parts Tex Mex

Ingredients

AVIKO Pati Parts Tex Mex 
8-12 small pork tenderloin medallions, about 3 cm thick
1 glass of beer
extra virgin olive oil
salt and pepper
rosemary

Sauce:
250ml cream 36%
150g grated cheddar cheese
1 partial teaspoon of sweet paprika (spice)
2 teaspoons of tomato paste
a pinch of salt 

1. Prepare AVIKO Pati Parts Tex Mex according to the instructions on the packaging.
2. Fry the rosemary in a pan with a little olive oil. Then place the pork medallions and fry them over medium heat for 3 minutes on each side.
3. Pour beer over them and evaporate the alcohol. Season with salt and pepper.
4. Reduce the liquid until it reaches a creamy consistency. Turn off the fire. Set the meat aside to rest for 2 minutes and serve with cheddar cheese sauce.

Sauce:
1. Grate the cheddar cheese.
2. Heat the cream with sweet pepper and tomato paste in a pot.
3. Mix thoroughly and add grated cheese. Stir until everything is dissolved.

On each plate, make 3 "blobs" of the sauce, spreading it on the plate with a spoon. Then we place 2-3 medallions and a dozen or so pieces of potato. Season with salt and pepper to taste and decorate with herbs.
