AVIKO Sweet potato fries with shrimp and mango-passion fruit-chilli salsa
AVIKO Sweet potato fries / AVIKO Sweet potato crinkle fries
Salsa:
1 fresh sweet mango (or pulp cut into small cubes)
1 passion fruit pulp
1/2 red onion finely chopped
a handful of fresh coriander (finely chopped)
1/2 cucumber (cut into small squares)
1 red chilli (finely chopped)
2-3 tbsp olive oil
salt, pepper
Shrimp:½ kg fresh shrimp (peeled and cleaned)
50ml orange juice
4 cloves garlic sliced
salt, pepper
3 tbsp olive oil
Prepare AVIKO Sweet potato fries according to the instructions on the package.
Mix all the ingredients for the salsa. Set aside in the fridge to allow the flavours to "marry".
Mix the shrimp with the remaining ingredients and leave to marinate for at least 30 minutes. After this time, fry the shrimp in a pan over medium heat for about 45 seconds on each side.
Spread the mango salsa on the AVIKO Sweet potato fries, then place the shrimp on the salsa. Garnish with fresh cilantro and mango slices. Enjoy!
