AVIKO Rösti pancakes served with Sicilian caponata

2 peppers
2-3 potatoes
2 eggplants
2 celery stalks
30 g pine nuts
30 g capers
a handful of black olives
300 g tomatoes
½ cup of vinegar
2 teaspoons of sugar

Prepare Rösti pancakes according to the instructions on the package - in the oven, in a frying pan or in a fryer.
Caponata is a mixture of vegetables based on eggplant with onion, tomato, black olives, capers and fresh basil.
1. Wash the vegetables. Peel the potatoes and cut them into cubes. Wash the peppers, remove the seeds and cut into strips. Wash the eggplant and cut it into cubes.
2. Heat the olive oil in a pan and fry the potatoes.
3. Fry the peppers in a separate pan. Once it is fried, we can fry the eggplant in the same pan.
4. In the meantime, cut the onion and celery into cubes.
5. Heat the olive oil in a pot, add the onion and celery and fry until the onion is translucent. Then add diced tomatoes, capers and pine nuts. Season with salt, mix and set aside.
6. When the vegetables are fried, place them on a piece of paper towel and drain excess fat, then place them in the pot with the tomatoes.
7. Increase the heat and mix.
8. Dissolve the sugar in the vinegar and add it to the pot. Cook for another 2 minutes.
Place a portion of caponata on a plate and place hot pancakes on it - 4-5 pieces per person.
Good advice:
It is worth decorating the dish with fresh basil leaves, seasoning with salt and pepper and drizzling with a few drops of good olive oil. Enjoy your meal!
