AVIKO Rösti Mini Airfryer
500g of pork, divided into 8-12 medallions (2-3 per person)
1 clove of garlic
1 sprig of rosemary
300g fresh peas
300g of water
2 spring onions
salt and pepper
grated Parmigiano Reggiano cheese
150g pancetta or bacon
extra virgin olive oil

Prepare AVIKO Rösti Mini according to the instructions on the package.

Cream:
1. Heat the olive oil in a pan and fry the chopped spring onion. Add peas and water, season with salt and cook for 10 minutes.
2. Meanwhile, fry the pancetta in a separate pan. As soon as it becomes crispy, place it on a piece of kitchen towel and drain excess fat.
3. As soon as the peas are ready, put them in a blender with a few tablespoons of cooking water and blend. Add grated Parmigianio cheese and blend again until a thick, uniform consistency is obtained.

Meat:
1. Fry the garlic and a sprig of rosemary in a pan with a little olive oil.
2. Then fry the pork medallions for 4-5 minutes.

Place a few Mini Rösti on a plate, portions of pea cream, 2-3 pork medallions and sprinkle with pancetta.

Good tip!
Decorate with chives, fried spring onion halves and pea seeds. Season to taste with salt and pepper.
