

AVIKO Potato pancakes - a cake with curd mousse and tomato-garlic salsa


AVIKO Potato pancakes
Cottage cheese filling:
300 g of cheese curd
100 g ricotta cheese
50 ml 12% cream
50 g Grana Padano cheese
salt, pepper, smoked paprika
a handful of fresh basil, finely chopped
Tomato salsa:
5 g garlic, finely chopped
75 g fresh or canned tomatoes (finely chopped)
1 tablespoon balsamic vinegar
1/2 teaspoon sugar
a pinch of salt, black pepper and cayenne pepper (or chilli)
Prepare AVIKO Potato pancakes according to the instructions on the package.
Cottage cheese filling:
Mix all the ingredients and the filling is ready.
Tomato salsa:
Heat 2 tablespoons of oil in a pan, add garlic, fry for 30 seconds, add tomatoes, stir and fry for 3-4 minutes. Add the rest of the ingredients, mix, keep on the heat for another 3 minutes and the salsa is ready!
Now assemble the cakes:
3 potato pancakes
200 g cottage cheese filling
2 tablespoons of tomato salsa
